We love quiche- everyone in my house eats it.
I usually double this recipe for dinner and we have a couple slices left over for someones lunch or late night snack.
I say usually, but I should say recently, because it is once again, my mom's recipe, and I just started making it regularly.
It is pretty easy to make. It helps to have a even cookie sheet so the ingredients do not spill over into your oven.
1 defrosted pie shell
1 10 oz. frozen box chopped spinach (defrosted and drained)
8 oz. muenster cheese (diced)
8 oz. heavy cream
1/4 cup milk
salt and pepper (to taste)
nutmeg (to taste)
Preheat oven to 425 degrees.
Place pie shell on cookie sheet and poke the bottom with fork so no air bubbles form. Bake 10 minutes and take out.
Put half of spinach in pan and then half your diced muenster. Then layer again.
Next take the remaining ingredients (beaten together) and pour over the layered cheese and spinach carefully.
Put in the 425 oven and bake for 15 minutes then turn down the oven to 300 degrees for 35 minutes. Enjoy!
